It’s nearly the time of the year when all the Sisters get their recipe books out to make special sweet things for Eid. Oh, how I love the smell of freshly cooked biscuits and cakes. I know we’ve still got Laylat-ul Qadr to come, but thought we could start swapping recipes now. After all there’s less than a week left until Eid…..
Here’s my contribution…..I will try and post a few more recipes. Hope you join in too! Muesli Bars A great flapjack type recipe for both old and the young. I was taught this recipe at high school and I've been baking it ever since - every Eid! Everyone loves it! You need:- 300g margarine
- 12 tbsp golden syrup
- 250g soft brown sugar
- 300g oats
- 400g added ingredients (e.g. dried fruits and nuts – I tend to use raisins and chopped almonds (which I roast before hand in the microwave)
- Milk chocolate to drizzle (optional)
Method:1. Preheat over. Grease tray or place baking parchment (preferably non-stick) 2. Place margarine in a pan. Add syrup and sugar. Heat slowly and stir. 3. Pour this mixture into a bowl and add rest of the ingredients and stir well. 4. Pour mixture into a baking tray (11 x 11 inch) and press down gently. 5. Bake in the oven for 30 mins or until golden brown. The mixture will seem a little runny even after it’s baked. This will set as it cools. 6. Let mixture cool down and drizzle melted chocolate (optional). Cut in small squares or bars whilst slightly warm. This will assist in cutting. Enjoy!

Assalamu 'Alaykum wa Rahmatullahi wa Barakatuhu This is a recipe from Me and Surriya. Carrot Cake Ingrediants: 225g/8oz wholemeal flour 100g/4oz butter or marg 100g/4oz dermerera sugar 100g/4oz honey 1 1/2 tsp baking powder 2 tsp cinammon 225g/8oz grated carrots 25g/1oz chopped nuts lemon juice Method: 1) Melt in pan the butter, sugar and honey. 2) Sieve the flour, baking powder and cinammon into a bowl. 3) Add the melted butter, sugar and honey into the flour mixture and mix. 4) Add the carrots and the nuts. 5) Add a couple of drops of lemon juice. 6) Pour into a greased cake tin and cook on gas mark 4 for 1 hour. 7)This is the hardest part Enjoy. ;D

H'mm nice recipies thanks, I will be trying them out. Here is one from me, an easy peasy one. Kajoor rolls. If you have a lot of kajoor left over at the end of Ramzan, grind them in a blender after deseeding them. Then add crushed badam and pista, Get a long piece of plastic sheet or cling film and and slighty spread with marge or butter.place your mixture on top and spread, then roll the plastic film like a swiss roll and then remove the plastic film and cut into small pieces. And wala! you have homemade arabic sweets. P.S. you can also add crushed biscuits and choc,s instead of badam pista and make a vareity, use your imagination, and let me know how you get on. Fun baking , cooking and rolling!

Bismillahir Rahmanir Raheem Assalamu 'Alaykum wa Rahmatullahi wa Barakatuhu Right I know there's only a few days left but here's another recipe from me. My brother first made this during his high school days, we all loved it and i've been making it since! ;D [glow=red,2,300]Jam Buns[/glow] Ingrediants: 4oz Self Raising Flour 2oz Margerine 2oz Sugar 1 egg Jam Method: 1) Set oven at 350'C or gas mark 4 2)Weigh flour and margerine. Rub margerine into the flour, gently with thumb and fingers until the mixture resembles breadcrumbs. 3)Add sugar (this could be included in stage 2 if you wish) 4)Whisk egg, add carefully to the mixture, mix to a still dough 5) Roll out dough on a floured board to the shape of a big sausage 6) Cut into pieces. Shape into a round ball and flatten slightly. Put buns onto a greased baking tray. Use a knife end to make a dent in the middle of each bun, then put the jam in the dent. 7) Cook for 10-15mins or until golden brown. Whenever I make it I can never get the mixture into a dough, could be because I make double the amount or I just dont know how to follow instructions Anyway, if you can't get it into a dough either, don't worry and just spoon blobs of the mixture on a baking tray and some jam in the middle, it will still turn out yummy!

I remember these, they taste delicious! Rich tea biscuits taste real good. Crush the biscuits slightly but don't over do it. Here's another recipe for cake lovers. I adapted this one from a 'sticky toffee pudding' recipe. Again it's ideal for left over kajoor from Ramadan, and tastes lovely when you're hungry or with a cup of tea or coffee. Date and Walnut CakeDate mixture• 12 oz chopped dates • 20 floz water • 2tsp bicarbonate of soda (optional) Place in a saucepan. Bring to boil and allow the mixture to go mushy. Add bicarbonate of soda. Let the mixture cool down completely. Cake mixture• 4 oz butter • 9 oz caster sugar (recipe suggests 12oz but I feel that it’s too much!) • 4 eggs • 12 oz self raising flour • 6 oz chopped walnuts Cream butter and sugar together until light in colour. Gradually beat the eggs in, then fold flour, walnuts and date mixture in gently. Place in a greased cake tin 11 x 11 inch. Cook for 25-30 mins on gas mark 4 until sponge is firm.
