assalamu alaikum,
If one is short of time whilst praying and has only limited time i.e in workplace then can one place a digital watch near the sijdah position so that one can see the time and therefore make sure they do not lenghten the prayer too much that it overflows the given work time break

In answer to your question ... No, as this distracts your prayer. The object of prayer is to be in communication with Allah the Almighty, asking for repentance from sin, asking for his pleasure, asking for needs to be fulfilled etc.
If you have a watch in front of you which you look at every so often, this the defeats the object of praying salah.
You could however time yourself, and stick to that time limit by not praying lengthy surahs, and not making additions. Like 5 minutes for 4 rakahs, 2 minutes for 2 rakahs etc.
This will then make you prompt, and keep you aware of time.
