Assalamu 'Alaykum wa Rahmatullahi wa BarakatuhuAs we all love food whether its Ramadan or not, As on Islam786 forum we believe in equality so we thought we would invite brothers and sisters to post their best recipes, you do not need to be a chef but may have a favourite dish/food you enjoy or order it to be cooked ;D So brothers if you do not do any cooking get that woman in your life (who could be your wife/mother) to help you come up with a recipe.The best recipe will be announced as "Best Ramadan Recipe". Seekh kebabs Ingredients:1 kg minced meat 2 tbsp oil 2 medium onions, chopped 1 tbsp ginger paste 1 tbsp garlic paste 1 tbsp red chilli powder 1 tbsp mint leaves, chopped 1 tbsp coriander leaves, chopped 1 tbsp all spice powder 1 tbsp raw papaya paste 1 egg 1 tbsp gram flour Salt to taste MethodRoast the gram flour on low flame till it emits an aroma. Place the minced meat and all the ingredients (except the oil) into a food processor and blend well. With wet hands, mould portions of the minced meat around an iron skewer. Press gently but firmly. Cook over a charcoal fire or you can use a hot grill. While cooking, rotate the skewer from time to time and brush a little oil on it, if it appears too dry. Remove from the skewer and serve hot with naan.

Assalamu 'Alaykum wa Rahmatullahi wa BarakatuhuFried dates 2 tablespoons of butter Dates with pips removed This is the most simple food to make, anyone can do it ;D. Heat the butter in a frying pan making sure the butter is pread evenly. Then add the dates press the inside of the dates against the butter. Once the insides of the dates become of a golden brown coluor serve and enjoy!!!!

Jalebi Ingredients1/2 kg sugar 2 cups water 1/2 tsp yellow colour 125 gms gram flour 2 tbsp self-raising flour 1/4 tsp baking soda Oil for frying MethodPrepare the syrup by boiling water, sugar and yellow colour. Let it simmer for some time. In a bowl, mix flour, gram flour, baking soda, yellow colour and water to make a thick paste. Heat oil in a pan. Place the batter in a cone made of polythene bag, and make circles of the batter in the frying pan. When crisp, remove and dip in the sugar syrup.

Although I dont do much cooking my self but this is one my favourites as its very simple to make and it tastes good aswell. I usually have it for iftaar and find it quite light easy to digest.
Tangy and spicy Fruit salad
Ingredients
1. 3 Apples, peeled 2. 3 Bananas 3. 3 medium sized boiled Potatoes 4. 1 Cucumber 5. 2 cups Grapes 6. 1 tsp. roasted ground Cumin 7. 1 tsp. Chaat Masala 8. 1 tsp. Mango Powder 9. 2-3 tbsp. lemon juice 10.Salt & Red Chili Powder according to taste
Method
1.In a large bowl cut apples, bananas , potatoes, and cucumber into small pieces. 2.Add grapes ,sprinkle lemon juice and all dry spices. 3.Mix with hand and refrigerate. Serve cold.

Assalamu 'Alaykum wa Rahmatullahi wa Barakatuhu A good thread sister nomee, I can see we have some budding chefs here Masha Allah. Well yesterday I made Kheema petis, I wouldn't say its my fav as there are many, but as its easy to make and different than your usual snack I thought i would share it with you all. You will need; 1lb of potatoes, boiled and mashed. 4oz of lamb mince washed and drain. One small onion. 2 green chilli's chopped. Danya washed & chopped 1/4 bunch A teaspoon of ginger/garlic, 1/2 a teaspoon of turmeric 1/2 a teaspoon of Danya jeera Salt to taste. Corn flour egg While your potatoes are boiling, place your washed mince in a frying pan, and cook until all the moisture(water) is dried. Then add all your ingrediant'sexcept the corn flour and egg, keep stirring until brown and cooked, add salt to taste. Then let the mixture cool. In the meantime you get your cooked potatoes peel and mash them adding salt and pepper and a bit of butter. Then you takea teaspoon of your mashed potatoes and flatten it out on the palm of your hand, then place a teaspoon of the mince (kheema) mixture in the middle and fold the ends of the potatoes around the kheema(mince) until all covered, dip in beaten egg and cover with cornflour. Do this with all your mixture until finish, then shallow fry in oil, and serve with dips and chutneys.

LEBANESE BAKED FISH CUTLETS WITH TAHINI Serves 4
Ingredients: 1/4 cup (60ml) olive oil 2 large brown onions (400g), finely sliced 4 firm white fish cutlets (1kg) 1/2 tsp salt 1/2 tsp freshly ground pepper 1/2 cup (125ml) tahini 2 tbs lemon juice lemon wedges 2 tbs finely chopped fresh flat-leaf parsley
Method: (1) Heat oil in a large frying pan/wok-cook onion (covered), stirring now & then for approx 15 mins-or until very soft and light brown. (2) Put the fish pieces in an oiled, shallow ovenproof (pirex) dish. Sprinkle with the salt 'n' pepper. (3) Combine the tahini with the lemon juice in a small bowl, beat with a fork until its smooth. drizzle the tahini mix over the fish, top with the onion mix. Bake, uncovered in a hot oven for approx 20 mins-or until the fish is cooked. (4) Once cooked, serve with the lemon wedges on top, and sprinkle with the parsely.

SMALL STICKY DATE CAKES! Ingredients: 1 1/2 cups (270g) pitted dates, chopped 1 tsp bicarbonate of soda 150g unsalted butter, chopped 1 1/2 cups (185g) self-raising flour 265g soft brown sugar-demera is good! 2 eggs, lightly beaten 2 tbs golden syrup 3/4 (185ml) single/double cream.
Method: 1) Heat your oven to Gas Mark 4 (180 C) 2) Grease 6 muffin cases, or muffin holes (if you have the actual tray!) 3) Put the dates & i cup ( 250ml) water in a pan & bring to the boil. Then remove from heat, and stir in the bicarbonate of soda. 4) Add 60g of the butter & stir until melted. 5) Sift the flour in a large bowl, add 2/3 cup (125g) of the sugar & stir. Make a well in the centre-add the date mix & egg & stir unitl it's combined properly. 6) Spoon some of the mix into the cases-or muffin holes & bake for 20 mins. 7) To make the sauce, put the golden syrup, cream, the rest of the butter & the remaining sugar in a small pan and stir on a low heat for 3-4 mins-or until the sugar has dissolved. Bring to the noil, then reduce the heat & let simmer (stirring) for approx 2 mins. 8) Remove cakes from the cases and drizzle with the sauce before you serve it. You can also have xxxxxxxtra cream with it if you like

Soft spicy koeksister dipped into sugar syrup and rolled in coconut.
Ingredients
4 med potatoes, cubed
4cups cake flour
5ml salt
5ml ground nutmeg
15ml ground cinnamon
15ml ground ginger
15ml whole aniseed
5ml fine aniseed
60ml sugar
1pkt instant dry yeast
30ml butter
250ml warm milk
60ml oil
2 eggs, beaten
Coconut for rolling
Oil for deep frying
Method
Boil potatoes and mash smooth while still hot. (Mix in a little potato water to make mash soft and smooth.) Sift flour with salt, spices and sugar. Sprinkle over yeast and mix through. Melt butter and add milk, oil and beaten eggs. Mix well and add to potatoes. Make well in centre of flour and add warm milk mixture. Mix into a soft dough. Place on working surface and knead for about 15mins into soft, smooth and elastic-like dough to develop the gluten. Place in a lightly oiled bowl. Lightly oil top of dough and cover with plastic wrap. Place in a warm place to double in size. On a lightly oiled surface, roll dough into two sausages. Cut into equal size portions and shape like a koeksister.
Leave on greased table to double in size for about 10-15mins, lifting koeksister gently and shaping if needed. Fry in moderately heated oil until golden brown on both sides. Take care that the oil is moderately hot in order for koeksister not to absorb oil. Drain on absorbent paper and allow to cool. Dip koeksister in sugar syrup over low heat. Roll in coconut.
NB: Koeksister can be frozen for up to 3 months before syruping. Thaw at room temperature and sugar as normal.
Making syrup
2½ cups sugar
2 cups water
Allow to simmer over low heat until syrupy.
Variation: Add two pieces stick cinnamon and two cardamom pods while boiling syrup

Special tikka Ingredients1/2 cup yoghurt 1/2 onion, chopped 1 tbsp ginger/garlic paste 1 chicken, cut into 8 pieces 1 tsp salt 1 tbsp oil 2 tbsp lime juice 2 tbsp coriander seeds 2 tsp turmeric powder 2 tsp all spices 3 red chillies, dried MethodGrind together chillies, coriander seeds, turmeric, all spices, ginger/garlic paste, onion, lime juice and salt. On a slow flame heat a frying pan and add the spice mixture. Stir for about two minutes and cool. In a bowl, mix well yoghurt, oil and the spice mixture to make marinade. Make three cuts in each chicken piece. Marinate the chicken for at least four hours. Wrap the pieces in foil, sealing well so that the juices don’t escape. Cook the chicken pieces over a very hot barbecue grill for about 15 minutes. Remove the foil with tongs and grill the chicken for five minutes and serve.

I dont know of any 'traditional muslim dishes', infact its the first time i have come across that concept. In my opnion I think every country or state has its own culture, tradition and its very own kindof food by which its identified by. Anyhow I have remmembered a great recipie using dates which is not traditional at all and can be enjoyed by light eaters at Sehri.... Dates & Oat Bars Oats actually reduce cholesterol and improve heart-health, so if you’ve been overindulging a bit at iftaar, these tasty treats may be just the thing for you and your family. They use honey instead of sugar, and the oats can help whisk the excess cholesterol from Iftaar feasting right out of your system. INGREDIENTS 1. 2 cups chopped and pitted dates 2. 1 cup orange juice 3. 1 teaspoon grated orange rind 4. 2 cups old-fashioned rolled oats 5. 1/2 cup whole wheat flour 6. 1/2 cup wheat germ 7. 1 teaspoon cinnamon 8. 1 teaspoon baking powder 9. 1/4 teaspoon baking soda 10. 1/2 teaspoon salt 11. 1/2 cup honey 12. 1/2 cup safflower or other light oil Method 1. In a saucepan, combine dates, orange juice, and orange rind. Bring to a simmer and cook, stirring occasionally, until dates are very soft. Remove from heat and set aside to cool. 2. Preheat oven to 350F. In a large bowl, combine oats, flour, wheat germ, cinnamon, baking powder, baking soda, and salt. 3. In a smaller bowl, combine honey and oil. Using a sieve, thoroughly drain the liquid from the cooked dates into the honey-oil mixture, stirring well to combine. In a separate bowl, mash dates until smooth. 4. Combine oat and honey mixtures, stirring to mix thoroughly. 5. Press two-thirds of this dough into a 9 x 9-inch cake pan. Spread mashed date filling over this, then gently and evenly pat remaining crumb mixture on top. 4. Bake 30 - 35 minutes or until lightly browned. Makes about 24 bars. Helpful Hints: Baked goods made with honey tend to brown quickly, so be sure to keep an eye on these so they don‘t overcook!

Bourek (Meat Filled Pastry)
Ingredients:
1 teaspoon butter 1/2 lb ground lamb 1 small onion 4 sprigs parsley, chopped 1/2 teaspoon salt 1/4 teaspoon black pepper 1/8 teaspoon cinnamon 8 phyllo pastry sheets, 12 x 17 inches each 3 tablespoons melted butter 1 egg, beaten
Method:
Melt the butter in a Pan over medium heat. Add the lamb and stir-fry a minute. Add the onion, parsley, salt, pepper and cinnamon and cook over medium low heat til lamb is cooked through. Take one sheet of phyllo and fold both side to the center length-wise. Sprinkle lightly with melted butter. Place 2 heaping tablespoons of meat stuffing at one end of the phyllo. Press it out til it is about 4 inches wide and 1 inch deep. Roll the dough over and roll about 3 times. Sprinkle a bit more butter on the end and dab with egg to seal. Do this with the remaining meat mix and phyllo. Bake in a buttered baking dish in 350 degree oven for 15 to 20 minutes.
