Assalamu 'Alaykum wa Rahmatullahi wa Barakatuhusister Attariya one more chicken recipe from my side. Chicken 65 This delicious recipe can also be made at home. Follow the simple recipe and make hotel type chicken easily at home. Ingredients: • 250 gms Boneless skinless chicken thighs • 1 tsp All spice, cloves , cinnamon, cardamom • 1-1/2 tsp Garlic paste • 1 -1/2 tsp Ginger paste • 2 tsp Red chilies powder • 2 tsp All-purpose flour • 1 Egg • 4 Drops food coloring, red • 2 Cups yoghurt • 12 Green chilies • 2 tsp Cornflour • 3 tsp Lime juice • Vegetable oil for frying • Salt to taste • Onions, for garnishing Procedure: • Take a bowl and mix corn flour, all purpose flour, ginger garlic paste, chilli powder, egg,all spice and salt to thick batter. • Add water if essential. • Add chicken pieces to the batter and marinate for about one hour. • Deep fry the marinated chicken pieces till they turn golden. • Take a sauce pan and heat 4 tsp oil. • Add fried chicken pieces, slit chillies, yogurt, red color and salt if desired. • Fry for about 4 to 5 minutes and remove it from the heat. • Now add lime juice, mix well and garnish it with onions. Karaahi Gosht/Karaahi Chicken/Karaahi keema just pick the one you like..
Ingredient
Chicken - 1/2kg Salt - 1tsp or to taste Green corriander(or)Dry fenugreek - 1tsp Klonji-Black onion seeds - little bit Garam masala powder - 1tsp Achaar masala powder - 1tsp Tomato - 250gr. Green pepper - 6/7 or to taste Ginger/Garlic paste - 2tbsp Yogurt - about half cup Onion - 1 medium sized
Method
1-In a pan add chicken and ginger/garlic paste..and add enough water so that it will be half cooked.. 2-Add onion in oil and fry till its light brown then add chicken with salt, red peper, Dry fenugreek and klonji and fry it as much as you like.. 3-Now add tomato, yogurt, green pepper and achaar masala.. when tomato are cooked and you can see some oil then add some garam masala.. then on the end add some green corriander.. and remove it from heat..

Ingredients: *8 pieces of chicken breast fillets cut into fingers *Melted butter *1 1/2 cups of crushed cornflakes *1/2 cup shredded cheddar cheese Method: Preheat oven to 375 degrees. Melt butter in a shallow bowl. Put coarsely crushed cornflakes into another shallow bowl and mix in cheese. Dip chicken pieces into butter first, then into cornflakes/cheese mixture. Then arrange them in a baking pan. Bake at 375 degrees for about 20 to 30 minutes, until chicken is done. Turn chicken half-way through to ensure even browning. Grill chicken at medium-hot for 6-8 minutes on each side or until juices run clear. Cool, cover and refrigerate it. Chop the chilled chicken and place in a bowl. Stir in the mayonnaise, onion, celery, salt and pepper flakes. Make a sandwich with tomato and lettuce. ASALATU WASALAMU ALAYKA YA RASULLALLAH Salla Allahu ta'ala 'alayhi wa SallamGrilled Chicken SaladINGREDIENTS: * 4 - Chicken breast halves, skin removed * 3/4 tsp - Coarsely ground pepper * 1 tbsp - Fresh lemon juice * 1/2 tsp - Turmeric powder * 1/3 cup - Melted butter * 1/4 cup - Fresh chopped basil leaves * 1/2 cup - Butter, room temperature * 2 tbsp - Fresh basil, chopped * 1 tbsp - Grated parmesan cheese * 1/4 tsp - Garlic powder * 1/2 tsp - Ginger powder * 1/2 tsp - Cilantro powder * 1/2 tsp - Cinnamon and cloves powder * 1/8 tsp - Pepper * 1/8 tsp - Salt METHOD:Press 3/4 teaspoon coarse pepper into chicken breast halves. Combine 1/3 cup melted butter and 1/4 cup chopped basil; blend well. Brush chicken lightly with basil and butter mixture. Combine 1/2 cup softened butter, 2 tbsp chopped basil, parmesan cheese, garlic, ginger, cilantro powder, salt, pepper and turmeric in a small bowl. Beat until mixture is well blended and smooth. Set aside. Grill chicken over medium heat for 35 to 45 minutes, turning and basting frequently with remaining melted butter mixture. To test for doneness, pierce with a fork; juices should run clear. Serve grilled chicken with basil butter mixture. Garnish with fresh cucumber, tomatoes, onion, if desired.

ASALATU WASALAMU ALAYKA YA RASULLALLAH Salla Allahu ta'ala 'alayhi wa SallamChina Sun ChickenINGREDIENTS: * 2 tbsp - vegetable oil * 1 pound - skinless, boneless chicken breast halves cut into 1/2 inch pieces * 2 - carrots, julienned * 2 - cloves garlic, pressed * 1 tsp - ground ginger * 1 - bell pepper, slivered * 1 can - pineapple chunks in natural juice, liquid drained and reserved * 1/2 cup - water * 2 tbsp - soy sauce * 1 tbsp - cornstarch * 1 tsp - white vinegar * 1/2 tsp - red pepper flakes METHOD:Heat oil in a wok over medium-high heat. Cook the chicken and carrots in the hot oil until the chicken is no longer pink and the carrots are tender. Stir in garlic and ginger. Cook for another 1 minute. Add the bell pepper and cook for another minute. Whisk together 3 tbsp of the reserved liquid from the canned pineapple along with the chunks, water, soy sauce, cornstarch, vinegar, and pepper flakes; stir into the chicken and vegetable mixture and bring to a boil, stirring until the sauce thickens. Serve with rice.

Melt butter in a large skillet over medium low heat. Add egg and leave flat for 1 to 2 minutes. Remove from skillet and cut into shreds. Heat oil in the same skillet; add onion and sauté until soft. Then add rice, soy sauce, pepper and chicken. Stir fry together for about 5 minutes, then stir in the egg. Serve hot.

INGREDIENTS * 1 carrot, thinly sliced on the diagonal * 1 onion, thinly sliced * 1 zucchini, sliced thinly * 1 cup broccoli florets * 1 each green pepper, thinly sliced * 8 oz. fresh mushrooms, sliced * 2 stalks of celery, thinly sliced on the diagonal * 2 cloves chopped garlic * 1 cup boneless fresh chicken, shredded * 4 tbsp olive oil * 1 tsp ground ginger * 1/2 cup soy sauce * 1/2 cup Szechwan spicy sauce * Rice METHOD Heat wok. Add oil and garlic. Add chicken and cook until done. Remove and set aside. Add carrots, peppers, onion, celery, zucchini, and broccoli. Stir and cook for two minutes. Add soy sauce and Szechwan sauce. Stir well. Add a little water if necessary. Add ginger, and mushrooms. Cook for two more minutes. Add chicken and stir well. Serve over cooked white rice.

INGREDIENTS * 2 kg chicken * 1 cup yogurt * 1 1/2 to 2 tbsp salt * 2 tbsp crushed red chillies * 2 tbsp red chilli powder * 1 tsp chaat masala * 2 tbsp vinegar * 1 tbsp ginger garlic paste * 1/2 tsp thymol seeds (ajwain) * 1 tbsp crushed coriander seeds * 1/2 tsp turmeric powder * 1/4 tsp nutmeg powder * Pinch of red/orange food colour * 1 tbsp oil METHOD Rinse and clean chicken. Pat dry with a paper towel. Make deep insertions/cuts on the chicken using a sharp knife to allow the marinade to penetrate well. Place chicken in a dish and keep aside. Combine marinade ingredients in a bowl to make a paste. Rub this paste on the chicken. Cover and refrigerate for 2-3 hours to allow the chicken to absorb the flavours. Now heat 1 tbsp of oil in a non-stick pan. Put chicken and marinade in the pan. Cook uncovered for 20-30 minutes or until chicken is tender and the water dries out. Sprinkle chaat masala and lemon juice on it and serve hot.

Here are some authentic Gurkha Curries,they are very tasty & these are portioned for a large gatherning,

This is the way Chicken Cardamom is REALLY cooked. It is not difficult to make and does not take very long either. Cooking it to this recipe will produce a totally authentic dish that will appeal to a wide range of palates. I have put up this recipe because it is so TASTY and the mix of flavours is really astonishing. This is not a fire breathing curry, but it is warm. Serve with a jug of water with lemon slices and ice cubes for those thirsty diners.
This recipe will make enough for 8 good sized portions. Divide everything by 2 for a standard meal - but keep the cooking times the same - and if you do scale down the quantities just keep an eye on the dish that it does not burn.
Ingredients: 2 Kg chicken meat chopped into small pieces or cubes 200 g onions 250 ml natural yoghurt 125 ml vegetable oil 5 g cardamom seeds 25 g ginger (chopped - NOT powdered) 4 cloves of garlic 5 g fennel seeds 3 g cayenne pepper (1 teaspoon) 5 g turmeric 7 cm of a cinnamon stick 2 cloves 350 ml cold water
Method: 1. Peel and chop the onions, garlic and ginger into small pieces. 2. Make a masala from the yoghurt, cardamom, chopped ginger, chopped garlic, fennel and cayenne by grinding the mixture into a smooth paste. 3. Sprinkle the meat with a little salt, then pour over the masala mixture, and allow to marinade for at least an hour. 4. Heat the oil, in a large pan, until a slight blue haze can bee seen. Add the cinnamon (chopped/ground into fine pieces), the cloves and the onion pieces. Cook until the onion is golden brown. 5. Add the marinaded chicken pieces to the pan which should still have the onions, cloves and cinnamon, making sure that you get as much of the marinade in the pan as possible. 6. Put it back on the heat. Without stirring the mixture, you should see oil slowly rising to the surface. At this stage CAREFULLY add the cold water and bring the mixture back to the boil. 7. Cover the pan and simmer over a low heat until the chicken is cooked and tender. Stir occasionally. 8. Serve the chicken meat on a bed of rice and pour over the masala that is left behind in the pan.
The rice can be either plain, pilau or saffron. On the table add small serving bowls with individually contain chopped onions, chopped tomatoes, chopped cucumbers and chutney. This allows your diners to add the hot/cold selections from the bowls as they wish. This is also wonderful when served with nan bread or similar. Quote: CHICKEN CUTLET

Method: 1. Peel the onions and the ginger pieces. DO NOT chop them up. 2. Put the whole onions and ginger pieces into the cold, salted water and bring to the boil. Add the chicken pieces. 3. Boil the chicken (with the onions and ginger) until the meat is cooked. Once cooked, remove the meat but keep the onions and ginger. Put the meat to one side and allow to cool. 4. Once cool, put the chicken, the ginger and the onions through a mincer. 5. Put the resulting chicken/ginger/onion mixture into a bowl and add the cinnamon, garam flour, turmeric and chopped chillies. Mix together well. 6. Add a pinch of salt and divide the chicken mixture into 8 equal sized pieces. 7. Mould each portion of the chicken mixture into a flatish medallion shape about 5 mm thick. Dust each medallion with plain flour, place into a bowl of whisked eggs, remove and coat with bread crumbs. 8. Repeat this for all 8 medallions (cutlets). 9. Heat a little oil in a frying pan and fry the cutlets on both sides until golden brown. Take care not to burn them on the outsides.
These chicken cutlets are best served with a salad and a garnish of sliced tomato and cucumber. A small bowl of mango (or any other flavour) chutney adds a little 'something'. Quote: FRIED CURRIED CHICKEN
Once again, this is yet another unique curry dish, but one which is simple to make. Serve with a jug of chilled water with a few lemon slices floating in it. This dish should not turn out to taste very hot.

Ingredients: 2 kg chicken meat 200 g onions 200 g tomatoes 75 ml vegetable oil 4 cloves garlic 25 g ginger 50 g garam masala 25 g coriander salt to taste
Method: 1. Cut the chicken meat into small pieces. 2. Cut the tomatoes into a concasse. See Tomato Concasse 3. Wash, then finely chop the coriander (or cheat and use dried and powdered coriander). 4. Peel the tomatoes and bring them up with the garlic and ginger to make a paste. 5. Sprinkle the garam masala over the chicken and then put it into a frying pan of hot oil. 6. Fry the chicken pieces until they are golden brown, then take them out and put to one side. Reheat the oil until it is hot. 7. Add the onion, garlic and ginger paste to the oil and fry for about 5 minutes. Add the tomatoes and salt. Continue to fry the mixture for another 4 minutes. 8. Now place the cooked chicken meat in the pan with the mixture and cook over a low heat until the meat is really tender and most of the liquid has boiled away. Take care the mixture does not burn. 9. Put the chicken into a heated serving dish and garnish with a little chopped coriander.
This is nice served on a bed of rice - or with a salad - with bowls of chopped onion, tomato, chutney, cucumber etc. on the table.
