BADAMI GOSHT Ingredients:5 tblsp vegetable oil (vanaspati tel) 2 cinnamon (tuj/dalchini) sticks 6 garlic (lasan) cloves 1 tblsp cardamom seeds 1 large onion (pyaj) chopped 2 garlic (lasan) cloves,crushed 1 1/2" fresh ginger, peeled and chopped 1 1/2 lb lean lamb, cubed 1 1/4 cup yogurt 1 tsp saffron (kesar) threads, soaked in 2 tblsp boiling water 1/2 tsp chili powder 1/2 cup ground almond 1 tsp salt (namak) 1 1/2 cup coconu (narial) milk 2 dried red chillies How to make badami gosht:Heat up oil in a heavy saucepan. Mix in cinnamon, cloves and cardamom and fry for 1 minute. Add onion and stir fry till soft Stirring occasionally. Mix in garlic and ginger and fry for 3 minutes, stirring frequently. Mix in lamb cubes and fry until brown for about 5 minutes. Whip yogurt, saffron mixture, salt and chili powder and mix in to lamb cubes. Stir fry for 5 minutes. Grind almonds with enough water to form a thick paste. Add paste and whole chilies to lamb cubes, stir well to mix paste with gravy. Simmer (boil slowly at low temperature) for 5 minutes over low heat. Mix in coconut milk, lower the flame, cover and simmer (boil slowly at low temperature) for 35-40 minutes or until lamb is cooked throughly. Uncover the pot for the last 10 minutes of cooking. transfer to a slightly heated up dish and serve hot.

BEST RECIPE OF RAMADAN SMALL STICKY DATE CAKES! Ingredients: 1 1/2 cups (270g) pitted dates, chopped 1 tsp bicarbonate of soda 150g unsalted butter, chopped 1 1/2 cups (185g) self-raising flour 265g soft brown sugar-demera is good! 2 eggs, lightly beaten 2 tbs golden syrup 3/4 (185ml) single/double cream. Method: 1) Heat your oven to Gas Mark 4 (180 C) 2) Grease 6 muffin cases, or muffin holes (if you have the actual tray!) 3) Put the dates & i cup ( 250ml) water in a pan & bring to the boil. Then remove from heat, and stir in the bicarbonate of soda. 4) Add 60g of the butter & stir until melted. 5) Sift the flour in a large bowl, add 2/3 cup (125g) of the sugar & stir. Make a well in the centre-add the date mix & egg & stir until it's combined properly. 6) Spoon some of the mix into the cases-or muffin holes & bake for 20 mins. 7) To make the sauce, put the golden syrup, cream, the rest of the butter & the remaining sugar in a small pan and stir on a low heat for 3-4 mins-or until the sugar has dissolved. Bring to the noil, then reduce the heat & let simmer (stirring) for approx 2 mins. 8) Remove cakes from the cases and drizzle with the sauce before you serve it. You can also have xxxxxxxtra cream with it if you like Mashallah this recipe has been voted anonymously as the Best recipe of Ramadan. BEEF FRYServing: 4 Preparation time: 20 mins Ingredients:Beef: ½ kg Onions: 6 Peppercorns: 8 Ginger: 1 Garlic: 6 cloves Coriander leaves: 1 bunch Mint leaves: 1 bunch Green chillies: 6 Tamarind: To taste Pepper: To taste Salt: To taste The Steps:Pre - Preparation : Cube the beef. Preparation :1) Chop the meat, wash it well, apply salt and keep it aside. 2) Boil the meat with the peppercorns and one onion a few mins. 3) Remove from heat, drain and reserve the stock for later use. 4) Chop the remaining onions, ginger, garlic, chillies, coriander and mint. 5) Saute the onions in hot oil until the colour changes, then add the chopped ginger, garlic, chillies, coriander, mint and the boiled meat. 6) Add a cup of the beef stock and simmer until the meat is done. 7) Lastly add the tamarind for taste and continue cooking, uncovered over a high heat all the stock dries up and the meat mixture become dry. Suggested Accompaniments:Bread or rice. I could eat a beef fry right now, with egg and noodles

I m happy to see this wonderful forum now decide to share my favorite Iftar recipes for Muslims around the world... Banana Trifle: Ingredients: Sponge Cake 1 Bananas 4-5 Cream 2 cup Vanilla or banana custard 2 tbsp Milk 2 Banana or vanilla essence 1/2 tsp Banana jelly crystals 1 packet Fruit syrup or milk as required Sprinkles to decorate Method: Cook the custard first by boiling milk and adding the custard powder earlier dissolved in little cold milk. Add the essence. Layer the sponge cake in a trifle bowl and moisten with fruit syrup or milk. Dissolve jelly in hot water and let set. Place the jelly cubes over. Add the sliced bananas. Pour the custard over. Chill well and then spread cream. Decorate with sprinkles and serve chilled.
